Der gebratene Speck im Eintopf und das St\u00fcck ger\u00e4ucherte Wurst daneben sind bei uns oft noch sehr beliebt. Ein L\u00f6ffel Bratenso\u00dfe obendrauf, und fertig ist das Gericht! Aber heutzutage wissen wir auch, dass es viel ges\u00fcnder, tierfreundlicher und umweltbewusster sein kann. Und wir haben eine Idee: Lernen Sie diesen veganen Gr\u00fcnkohleintopf mit viel Liebe und einem Hauch von K\u00fcrbis kennen! Auch ich bin damit aufgewachsen, aber jetzt esse ich dieses Lieblingsgericht anders. Denn auch als Veganer kann man einen Teller Gr\u00fcnkohl genie\u00dfen. Zu diesem veganen Gr\u00fcnkohl-Eintopf essen meine Kinder gerne ein St\u00fcck vegane R\u00e4ucherwurst. Und wussten Sie, dass Gr\u00fcnkohl ein absolutes Superfood ist? Gr\u00fcnkohl ist nicht nur ballaststoffreich, sondern auch reich an Eisen und Kalzium und enth\u00e4lt viele Vitamine A, C und K. Eine wahre Vitaminbombe! Am besten schmeckt mir Gr\u00fcnkohl aus biologischem Anbau oder aus dem Garten meiner Eltern. Ein bisschen m\u00fchsam zu putzen, aber lecker! Nachdem er Minusgraden ausgesetzt war, durchl\u00e4uft der Gr\u00fcnkohl einen Prozess, der ihn s\u00fc\u00dfer schmecken l\u00e4sst. Wenn er gefriert, wird die St\u00e4rke der Pflanzen in Zucker umgewandelt. Eine Pflanze tut dies, um den Gefrierpunkt zu senken. Das macht sie ein wenig widerstandsf\u00e4higer gegen Frost, ver\u00e4ndert aber auch den Geschmack und macht ihn dadurch ein wenig s\u00fc\u00dfer.<\/p>\n\n\n\n<p>Es gibt eine Herbst- und eine Winterernte von Gr\u00fcnkohl, weshalb man dieses k\u00f6stliche niederl\u00e4ndische Gem\u00fcse besonders lange genie\u00dfen kann. Zum Zeitpunkt des Schreibens tobt ein Sturm \u00fcber den Niederlanden und der Gr\u00fcnkohl mit Kartoffeln und K\u00fcrbis k\u00f6chelt in meiner K\u00fcchenzeile.
