In der Tat wird dieses Gem\u00fcse in der niederl\u00e4ndischen K\u00fcche nicht mehr oft verwendet. Das ist schade, denn Schwarzwurzeln sind gesund, nachhaltig und von Oktober bis M\u00e4rz auf niederl\u00e4ndischem Boden einfach erh\u00e4ltlich. Auf den ersten Blick sehen Schwarzwurzeln mit ihrer schlammigen, schwarzen Schale nicht sehr attraktiv aus. Aber wenn man sie sch\u00e4lt, kommt ein sch\u00f6nes wei\u00dfes Gem\u00fcse zum Vorschein, \u00e4hnlich wie Spargel. Schwarzwurzeln haben einen milden, nussigen und leicht s\u00fc\u00dfen Geschmack. Sie werden oft mit Spargel, Artischocken oder Pastinaken verglichen und haben einen subtilen erdigen Unterton. Die Textur ist cremig und weich, wenn sie gekocht wird. Dabei kann manchmal etwas klebriger Saft entstehen, aber das war f\u00fcr uns kein Problem, weil wir ihn leicht von den H\u00e4nden waschen konnten. Wenn Sie nach dem Kochen einen wichtigen Termin haben, k\u00f6nnen Sie sicherheitshalber K\u00fcchenhandschuhe anziehen. Wenn Sie die Schwarzwurzeln nicht sofort kochen, legen Sie sie nach dem Sch\u00e4len am besten in Wasser mit Zitronensaft ein, damit sie sich nicht verf\u00e4rben.
