Diesmal macht sie ein \u00fcberraschend leckeres und lange haltbares Rezept mit Fichtenspitzen. Die jungen, frischen gr\u00fcnen Enden der Fichte sind nicht nur essbar, sondern auch voller Geschmack und Vitamin C. Und man kann sie auf vielerlei Weise verwenden - aber heute werden sie eingelegt. So k\u00f6nnen Sie sie noch monatelang genie\u00dfen.<\/strong><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Die Fichte, ein schmackhafter Baum voller \u00dcberraschungen<\/h2>\n\n\n\n<p>Die Fichte ist ein Baum, mit dem man wirklich alles machen kann. Sie w\u00e4chst mit Nadeln, die das ganze Jahr \u00fcber gr\u00fcn bleiben, und verliert sie so gut wie nie - h\u00f6chstens, genau wie der Mensch, ein paar \u2018Haare\u2019 pro Tag. Die Nadeln sind einzeln am Zweig befestigt (n\u00fctzlich, um sie zu erkennen, dazu sp\u00e4ter mehr). Oft sieht man auch diese l\u00e4nglichen Fichtenzapfen herabh\u00e4ngen - das sind die weiblichen Zapfen. Das liegt daran, dass der Baum einh\u00e4usig ist, das hei\u00dft, er hat sowohl m\u00e4nnliche als auch weibliche Bl\u00fcten. Die m\u00e4nnliche Bl\u00fcte erkennt man an den weichen, mit Pollen gef\u00fcllten Zapfen an der Basis der jungen Triebe.<\/p>\n\n\n\n<p>Von April bis Mai erscheinen die jungen, frischgr\u00fcnen Knospen - und dann wird es f\u00fcr Wildsammler interessant. Diese Knospen sind essbar, solange sie noch weich sind. Man kann sie roh essen, in Salate mischen, in Honig einlegen oder - wie in diesem Rezept - in S\u00e4ure einlegen. Auch die anderen Teile des Baumes sind vielseitig einsetzbar: Nadeln f\u00fcr Tee, Bl\u00fctenknospen als Kraut, das Kambium (die innere Schicht unter der Rinde) sogar als eine Art Paste. Und wer r\u00e4uchert schon Gem\u00fcse auf dem Grill oder im Backofen? Legen Sie einen Fichtenzweig darauf. Eine Geschmacksbombe!<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">So erkennen Sie eine Fichte!<\/h2>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-28f84493 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\" style=\"flex-basis:66.66%\">\n<p>Es gibt verschiedene Arten von Fichten. Die bekannteste ist die Fichte - das ist der typische Weihnachtsbaum, den man im Dezember \u00fcberall sieht. (Und nein, das ist kein Tipp, den Weihnachtsbaum zu essen, denn er wird oft mit Pestiziden behandelt. Lassen Sie diese also weg). In den Niederlanden gibt es auch die Wei\u00dftanne und die Douglasie, die alle essbar sind und ein eigenes Geschmacksprofil haben: Die Fichte hat einen zitrusartigen Geschmack, die Douglasie erinnert an Orange und Grapefruit und die Wei\u00dftanne ist subtiler.<\/p>\n\n\n\n<p>Sparring ist relativ leicht zu erkennen. Ein praktischer Trick ist, eine Nadel zwischen zwei Fingern zu rollen. Funktioniert das reibungslos? Dann handelt es sich in der Regel um eine Fichte. Ist es schwierig? Dann handelt es sich wahrscheinlich um eine Wei\u00dftanne oder Douglasie - denn diese haben flache Nadeln. Die andere Regel lautet: Fichte = solo. Die Nadeln wachsen einzeln am Zweig. Eine Kiefer hat Paare, und bei der L\u00e4rche wachsen die Nadeln in B\u00fcscheln. Also: Wenn Sie lernen, eine Wei\u00dftanne zu erkennen, erh\u00f6hen Sie sofort Ihre Chancen, auf diesen k\u00f6stlichen Pilz zu sto\u00dfen. Zwei Fliegen mit einer Klappe!<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Wann w\u00e4chst die Fichte?<\/h3>\n\n\n\n<p>Im Fr\u00fchjahr erwacht die Fichte zum Leben und ab April erscheinen die jungen, frischgr\u00fcnen Fichtenknospen. Diese Knospen sind weich, saftig und voller Geschmack. Auch m\u00e4nnliche und weibliche Bl\u00fcten sind dann zu sehen, mit Bl\u00fctenknospen und Zapfen, die man in der K\u00fcche verwenden kann. Aber es sind die jungen Spitzen, auf die wir jetzt unser Augenmerk richten. Denn im April und Mai ist die Zeit, sie zu pfl\u00fccken. Frisch vom Baum, und dann... ab in den Topf!<\/p>\n\n\n\n<div class=\"wp-block-columns has-background is-layout-flex wp-container-core-columns-is-layout-28f84493 wp-block-columns-is-layout-flex\" style=\"background-color:#eff1ec\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<h3 class=\"wp-block-heading\">Verwechslungsgefahr: die giftige Eibe<\/h3>\n\n\n\n<p>Die Fichte ist essbar, aber Vorsicht: Sie hat einen giftigen Bruder - die Eibe. Dieser buschige Nadelbaum sieht auf den ersten Blick vielleicht ein bisschen aus wie eine Fichte, aber man sollte sich nicht t\u00e4uschen. Alles an diesem Baum ist extrem giftig. Nur das Fruchtfleisch der roten Beeren (die an den weiblichen B\u00e4umen wachsen) ist essbar - und selbst das ist mit Vorsicht zu genie\u00dfen, denn der Samen im Inneren ist f\u00fcr Mensch und Tier t\u00f6dlich.<\/p>\n\n\n\n<p>So erkennen Sie die Eibe:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Die j\u00fcngsten, \u00e4u\u00dferen Zweige haben noch keinen verholzten, sondern einen gr\u00fcnen Kernzweig (an dem die Nadeln befestigt sind). Fichten sind immer verholzt, mit Ausnahme der jungen, blassgr\u00fcnen Fichtenspitzen, die an Quasten erinnern.<\/li>\n\n\n\n<li>W\u00e4chst eher in die Breite als in die H\u00f6he (normalerweise nicht h\u00f6her als 10 bis 15 Meter).<\/li>\n\n\n\n<li>Hat biegsame Zweige (Fichten brechen schneller).<\/li>\n\n\n\n<li>Die \u2018Nadeln\u2019 sind eher flache, weiche Bl\u00e4tter.<\/li>\n\n\n\n<li>Die Bl\u00e4tter sind oft unordentlich oder in zwei Reihen am Zweig angeordnet.<\/li>\n\n\n\n<li>Sp\u00e4tsommer: leuchtend rote Beeren an den weiblichen Str\u00e4uchern.<\/li>\n<\/ul>\n\n\n\n<p>Das Besondere: Dieser gef\u00e4hrliche Baum wird in der Medizin zur Bek\u00e4mpfung kranker Zellen in der Chemotherapie eingesetzt. Also ja - t\u00f6dlich, aber auch lebensrettend. Die Moral von der Geschicht'?
