Joehoe, can the people from Michelin come to Dokkum again? Restaurant Ode is already in the Michelin guide, but still doesn’t have a star. In our opinion, they should give it another good think about it. At this intimate restaurant you can experience Friesland at its best: local ingredients, vegetables taking center stage and dishes that are almost too beautiful to eat.
Restaurant Ode Dokkum: The New Friesian Cuisine
Restaurant Ode is located behind a monumental facade in the historic center of Dokkum. As soon as you enter, you immediately notice the unusual layout. In the center are two open kitchen blocks, and on either side are the guests with their faces towards the kitchen. So you are looking at the chefs as if you were at a cooking show. You see how each dish is prepared, after which the chefs bring it to the table themselves and tell you what you are tasting. There is room for about 26 guests. This makes the evening personal and intimate. Fine dining, But without rigid routines.
Chef Liudger van der Meer cooks according to the principles of Dutch Cuisine. The kitchen first looks at ingredients from Dokkum, then Friesland, and only then the rest of the Netherlands. The season determines what is on the menu. The 80% /20 principle is followed: 80 plant-based and 20% animal-based. At Ode they call it the New Friesian Cuisine. The same line is also followed in the drinks. In the wine arrangement, Dutch wines are given a serious place, and there is (of course) a fully elaborated alcohol-free arrangement.
For many people Dokkum isn’t just next door, but we have a great solution for that: make it a city trip. The Frisian city of the Elves is incredibly fun and the Wadden Sea is just around the corner. This hotel is right next to the restaurant, in a former orphanage. So we already have a reason to go back!
