Voor je het weet liggen er aardbeien, bessen of perziken in de fruitschaal die eigenlijk vandaag nog op moeten. Weggooien is zonde. Gelukkig bestaat er een simpele truc om dat fruit om te toveren tot iets heel bijzonders: koso. Deze Japanse gefermenteerde siroop maak je met niets meer dan fruit en suiker. Saskia leerde het maken tijdens een workshop bij Diane van Atelier de Cl\u00e9mentine en ze kon er niet genoeg van krijgen!<\/strong><\/p>\n\n\n\n<!--more-->\n\n\n\n<h2 class=\"wp-block-heading\">Fermenteren: een oude techniek die weer helemaal terug is<\/h2>\n\n\n\n<p>Tijdens een workshop op een prachtige zomerse dag bij dagcaf\u00e9 en theetuin <a href=\"https:\/\/opmaarhuizen.nl\/\" target=\"_blank\" rel=\"noreferrer noopener\">Opmaarhuizen<\/a> doken we samen met Diane van <a href=\"https:\/\/www.atelierdeclementine.nl\/\" target=\"_blank\" rel=\"noreferrer noopener\">Atelier de Cl\u00e9mentine<\/a> in de wereld van fermenteren. Diane geeft daar samen met haar moeder Maryl\u00e8ne workshops over fermentatie en bijzondere drankjes. Tijdens deze workshop stonden er twee recepten op het programma: koso (daar komen we zo op) en gefermenteerde groenten.<\/p>\n\n\n\n<div class=\"wp-block-columns has-background is-layout-flex wp-container-core-columns-is-layout-28f84493 wp-block-columns-is-layout-flex\" style=\"background-color:#eff1ec\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<p><strong>ALSO INTERESTING:<\/strong> <a href=\"https:\/\/www.thegreenlist.nl\/en\/your-travel-guide-for-a-weekend-in-groningen\/\">reisgids voor een weekendje weg in Groningen.<\/a><\/p>\n<\/div>\n<\/div>\n\n\n\n<p>Voordat we begonnen met snijden, roeren en potten vullen, nam Diane ons eerst even mee in het verhaal achter fermenteren. Het is een oeroude techniek waarbij micro-organismen, zoals bacteri\u00ebn en gisten, suikers omzetten. Daardoor verandert voedsel langzaam van smaak, geur en structuur. Het mooie is dat dit proces vanzelf op gang komt, want deze micro-organismen zitten al op fruit en groenten, in de lucht en in de bodem. Mensen gebruiken fermentatie al eeuwen om eten langer te bewaren, maar ook om nieuwe smaken te ontwikkelen. Denk aan brood, kaas, yoghurt of zuurkool. En dus ook aan koso.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Wat is koso?<\/h3>\n\n\n\n<p>Koso is een gefermenteerde rauwe siroop uit Japan die je maakt van fruit en suiker. Door lagen fruit en suiker op elkaar te leggen en het mengsel een tijdje te laten staan, komt de fermentatie vanzelf op gang. De suiker trekt het sap uit het fruit en de natuurlijke micro-organismen doen de rest. Het resultaat is een geurige siroop met een frisse, lichtzure smaak en een diepe fruitigheid. Heel anders dan een gekookte siroop, waarbij smaken vaak wat vlakker worden. Bij koso gebeurt juist het tegenovergestelde: de smaken worden intenser en complexer.<\/p>\n\n\n\n<p>En misschien nog wel het leukste: koso is een perfecte manier om zomerfruit te redden. Een bakje aardbeien dat te zacht wordt, een paar overrijpe perziken of een handje bessen dat achterin de koelkast ligt: het kan allemaal in de pot. Tijdens de fermentatie trekt de suiker het sap en de aroma\u2019s uit het fruit, terwijl natuurlijke micro-organismen hun werk doen. Zo ontstaat een frisse, lichtzure siroop met een diepe fruitsmaak.
