Oyster mushroom burger recipe

This oyster mushroom burger is a great example of how to make a hearty vegetarian burger with just a few simple ingredients. Oyster mushrooms provide a full, savoury flavour and a satisfying texture, while chickpeas help everything bind together nicely. Combined with some herbs and a crispy topping of oats, you get a burger that works just as well in a bun as it does alongside a fresh salad.

Ingredients
  

  • 250 g oyster mushrooms
  • 1 garlic clove
  • 1 onion
  • 1 fluorescent thyme Possibly dragon
  • around 100g chickpeas
  • olive oil
  • salt and pepper
  • Buckwheat flour
  • 1 hi
  • possibly a few wood sorrel leaves or parsley very finely cut
  • Oatmeal

Instructions
 

  • Finely chop the onion, garlic, and oyster mushrooms.
  • Fry the onion, garlic and oyster mushrooms in some olive oil with the thyme (or tarragon) in a frying pan until they are soft and lightly golden brown.
  • Drain the chickpeas, but save the liquid. You can use this later if the mixture is too dry.
  • Put the chickpeas, roasted mixture and egg into a bowl and mash everything into a coarse burger mixture.
  • Add the buckwheat flour bit by bit until the mixture thickens. You can also mix in the finely chopped wood avens or parsley.
  • Taste the mixture and season with pepper and salt. If it's too dry, add a little of the chickpea liquid.
  • Wet your hands and form patties from the mixture.
  • Sprinkle the porridge flakes onto a plate and bread the burgers on both sides.
  • Fry the burgers in some olive oil on both sides until golden brown.
  • Serve the burgers in a bun or with a fresh salad. If you have a (vegetable) garden, pick some young leaves or herbs to add for extra flavour.
