Vegan recipe: bao buns with jackfruit

This is one of my favourite sandwiches: bao buns with jackfruit. You can vary endlessly with bao buns and it looks so cosy on the table when you have guests.

Kitchenware

Ingredients
  

  • 1 tin Fairtrade Original pulled young jackfruit
  • 1 toe grated garlic
  • 1 el agave syrup
  • 75 ml soy sauce manis
  • 3 el soy sauce
  • 1,5 el hot sauce/ sriracha sauce
  • 2 fluorescent Japanese mirin
  • 1 fluorescent cornstarch + 2 tsp water
  • 2 fluorescent water
  • 6 bao buns
  • 2 snack cucumbers
  • 2 stalks of spring onion
  • 1 red or yellow pepper
  • 1 dash of rice vinegar
  • red cabbage raw & chopped
  • 1 handful of fresh coriander
  • 1 handful of roasted peanuts
  • hoisin sauce

Instructions
 

Bao buns

  • Bring water to the boil in a saucepan (where the steamer basket fits exactly).
  • Cut the baking paper into the shape the steamer basket and spread it on the bottom.
  • Spread the bao buns in the steamer basket and steam according to the packet.

Jackfruit

  • Grab a frying pan.
  • Add the soy sauce, garlic, soy sauce, agave syrup, sriracha & Japanese mirin and heat on low heat.
  • In a small bowl, mix the cornstarch with the water and then add to the marinade in the frying pan so that the marinade binds well.
  • Drain the pulled jackfruit and pat dry with kitchen roll.
  • Add the jackfruit to the marinade and simmer for 15 minutes with the lid on the pan.
  • If the marinade has not thickened sufficiently, remove the lid to let it cook in further.

Toppings

  • Meanwhile, cut the cucumber into small slices and add to a bowl with a splash of rice vinegar for a fresh acidity.
  • Cut the spring onion and red pepper into small rings and finely chop the peanuts.
  • Serve the spring onion, red pepper, chopped peanuts, red cabbage, coriander and cucumber in their own bowl each.

Finish

  • Scatter the bao buns, jackfruit and all other toppings on the table.
  • Build your own bao bun and garnish extra with fresh coriander and hoisin sauce.

Notes

Tip: If you bought the bao buns from the toko, before steaming them, let them defrost for a while. This way, you can easily take them apart and steam them separately in the steamer basket.
