Vegan recipe: oyster mushrooms in beer batter

Oelala... Oesterzwammen in bierbeslag. In dit lekkere vegan gerecht kun je al je restgroenten kwijt en zo maak je in een handomdraai er voedzame groente pannenkoekjes van. Dit is een budgetrecept om je vingers bij af te likken. Wie zegt dat goed en gezond eten duur is?

Kitchenware

  • 1 frying pan with lid and spatula
  • 1 mixing bowl
  • 1 hand blender
  • 1 scale
  • 1 ladle or other large serving spoon

Ingredients
  

Fried oyster mushrooms

  • 150 gr oyster mushrooms
  • 2 fluorescent soy sauce
  • 2 el water
  • ¼ fluorescent salt
  • ½ fluorescent sugar
  • oil for frying

Beer batter

  • 150 gr flower
  • 15 gr cornstarch
  • 2 cloves garlic crushed
  • 1 fluorescent cane sugar (or other fair trade raw sugar)
  • ½ fluorescent salt
  • 1 fluorescent baking powder
  • optional: dash of turmeric powder or paprika
  • 1 glass beer
  • 1 el soy sauce  
  • 1 fluorescent sesame oil (optional)

Making vegetable pancake

  • fried oyster mushrooms (see step 1)
  • basis for beer batter (see step 2) 
  • 3 groves spring onion (chopped)  
  • 1 onion (chopped)  
  • 1 red pepper (chopped)  
  • Optional leftover vegetables such as peppers, leeks, carrots, etc.
  • oil for frying
  • Optional sriracha sauce or soy sauce for dipping

Instructions
 

Step 1: frying oyster mushrooms

  • Tear the oyster mushrooms into thin strips.
  • Mix water, soy sauce, sugar and salt in a bowl to make a marinade (sauce).
  • Heat a frying pan and put the oyster mushrooms in it without oil!
  • Then add the sauce, cover until all the liquid has evaporated (this took five minutes in our case).
  • Only then add oil and fry the oyster mushrooms for a few more minutes.
  • Ready? Set the oyster mushrooms aside.

Step 2: make oyster mushrooms in beer batter a.k.a. vegetable pancakes

  • Put the flour, cornstarch, crushed garlic, cane sugar, sea salt, baking powder and pinch of spices in a bowl.
  • Ready? Set aside next to the oyster mushrooms.
  • Chop all the vegetables as finely as possible for in the pancake: spring onion, red pepper and optionally any other leftover vegetables you want to put in. We had saved a pepper for fifty cents and added it.
  • Put everything back into a bowl and set aside.
  • Put the beer in the bowl (with the flour and flours) and make a batter with the help of the mixer.
  • Add the chopped vegetables and oyster mushrooms and stir well.
  • Put a frying pan with a dash of oil on high heat. Make sure the pan is well hot, just as you would fry an ordinary pancake.
  • Using the large spoon, pour batter into the pan and fry pancakes. Fry them nice and brown on both sides. Be careful, this goes really fast!
  • Serve with the soy sauce or sriracha sauce.
