For on your greener I-have-something-special to celebrate list: RIJKS. Dine in the Rijksmuseum. Here, it's all about Dutch products in all their simplicity, or ‘low food’. Led by executive chef Joris Bijdendijk and kitchen chefs Yascha Oosterberg and Friso van Amerongen, you can taste the ‘cuisine of the Low Countries’ at its very best. Not surprisingly, the restaurant has been awarded a Michelin star.
Eating at the Rijksmuseum
At thegreenlist.nl we had something to celebrate again and thought that was a perfect reason (or excuse?) to dine at RIJKS. After all the enthusiastic stories, it was high time to experience it for ourselves. We got a seat at the chef's table by Friso van Amerongen - what a spectacle to see up close how a Michelin-starred kitchen works. We could choose from two menus: the traditional RIJKS menu or the RIJKS Next Menu. Our choice fell on the Next Menu, a six- or seven-course menu that gives local and seasonal cooking just that extra bit of excitement. The RIJKS team also works with the best farmers, market gardeners and fishermen for this menu. The result is exciting Dutch dishes with an exotic twist such as North Sea crab curry and turbot with peanut, tamarind and garlic.

Culinary delights at RIJKS
In short, at RIJKS, sustainability is about local, seasonal cooking and a fair chain. So that doesn't necessarily mean entirely plant-based, although a lot is possible by mutual agreement, so everyone can enjoy a top culinary evening. And about the interior, we can be briefer.
