Oyster mushrooms are a popular type of mushroom available year-round in the Netherlands. Their cultivation process is eco-friendly, as they grow on waste streams and require little water and energy. Also fun: you can grow them yourself on coffee grounds. Known for its velvety ‘meaty’ texture, the large mushroom absorbs flavours perfectly, which also makes it a perfect vegan chicken piece. But there are more reasons to praise this beautiful fungus to the skies, besides sustainability and a fine taste experience. Oyster mushrooms are low in calories, rich in protein, fibre, vitamins (such as B vitamins and vitamin D) and minerals (such as iron and potassium). So that oyster mushroom can stay in. But what do you make with it? We have five recipes for you: from easy to a feast and from healthy to a cheat dish. The choice is yours!

Vegan autumn stew with mushrooms

The days are getting colder and colder. Then an autumn stew is super tasty and (also vegan) easy to make. This stew version is plant-based and with mushrooms for that tasty extra filling. Although opinions on mushrooms are divided at home with culinary editor Anne, all four of her children find this stew more than tasty! Udon noodles with mushrooms

One of the Asian food trends are Udon noodles. Greenlist chef Anne dove into the kitchen and got to work on this thickest vegan noodle. She made Udon noodles with mushrooms. Asian vegan gyoza

Have you heard of gyoza? These Japanese dumplings are incredibly delicious. Also vegan! Nina dives into the kitchen for us and makes this dim sum snack with white cabbage and king oyster mushrooms. In short, very healthy, tasty and a party on the table. Nina: ‘The king oyster mushrooms provide a meaty texture and are therefore accessible to everyone, even the biggest meat lovers.’ Check out this tasty snack.
