It's that time of year again, so we like to bring you ideas for a vegetarian barbecue. How about green asparagus? You can conjure them up on your garden table within ten minutes, and they are oh-so-tasty. Even a meat lover will lick his fingers at these. So sit down in the garden and discover this vegetarian barbecue dish.
Green asparagus, a healthy and sustainable choice
Green asparagus from the barbecue is a treat every spring and summer. White asparagus is often a matter of ‘you love them or you hate them’, but green asparagus is much more accessible. Perhaps it is the nutty flavour or the crunchy bite by grilling? Anyways, even children love them. And that's good, because green asparagus is packed with vitamins such as vitamin K, vitamin C, vitamin A and folic acid. And of course, green asparagus are a sustainable choice on the barbecue, because vegetables have a much smaller food footprint than a piece of meat. It's extra sustainable if you buy your green asparagus locally. And you can too! Green asparagus is available from Dutch soil between February and the end of June, but even after that, you can still find a great more sustainable option. At least, if you choose a European harvest, for example from Spain. We have previously listed all seasonal vegetables for you.



An easy side dish to a (vegetarian) barbecue are these grilled green asparagus.

On the vegetarian barbecue: green asparagus!
Kitchenware
- cutting board
- chopper
- barbecue
- sign(to mix oil and spices and marinate the asparagus briefly)
Ingredients
- green asparagus
- olive oil
- salt
- pepper
- Parmesan cheese
- optional toasted pine nuts
Instructions
- Cut the hard bottom of the asparagus.
- Make a mixture of olive oil and salt and roll the asparagus through it.
- Place the asparagus on direct heat. Be careful: sometimes they catch fire, but if it happens very briefly, it's delicious. Then you have a flambéed flavour. Absolutely do not let the asparagus blacken, that is unhealthy and also not tasty.
- Serve the grilled asparagus on a platter and sprinkle with Parmesan, salt and pepper and toasted pine nuts, if desired. Ta-da! So it's that easy.
