What do you do on 1 January with those last oliebollen that overnight have become tough. Throwing them away is a waste, of course! Fortunately, you can make surprisingly tasty things out of old oliebollen such as French toast, oliebollenbrood and oliebollenwafels. This year, we have another fun recipe. With this simple recipe, you transform oil balls into crunchy oliebollen crackers - delicious as toast with a cheese or as a sweet snack.
First aid for old oliebollen
After the turn of the year, unfortunately, many oliebollen still end up in the bin. A shame! Although exact figures are lacking, the Algemeen Dagblad estimates that we eat around eighty million oliebollen in the Netherlands every year. Although a large proportion of these are eaten - thankfully - quite a few also remain in that bowl. Inside no-time they become tough. In the bin? No need to! With this recipe, you can turn those forgotten oliebollen into a festive, crunchy snack that will help you usher in the new year right away.

Turn old oliebollen into the tastiest crackers. These are delicious with both sweet and savoury fillings.

Oil cake crackers made from old oil balls
Kitchenware
- bread knife and board
- oven with baking tray
Ingredients
- leftover oliebollen
- optional sweet topping: icing sugar
- optional savoury topping: cheese, tapering, cream cheese
Instructions
- Cut thin slices from your old oliebollen. The thinner, the crunchier.
- Put them in a sandwich iron (2 minutes) or fry them alternately in a grill pan about 2 minutes each side. If you have an oven: bake at 180°C in about 5 minutes. In the airfryer: heat at 180°C and bake for 3-4 minutes until nice and crispy.
- Sweet: sprinkle icing sugar over the crackers and serve as a sweet snack.
- Savoury: use the crackers as toasts on your cheese board, with tapenade or cream cheese. The slightly sweet flavour of the oil bun goes surprisingly well with savoury toppings!
