Recipe: vegan jackfruit satay

The perfect vegan greasy bite is this vegan fries of vegan jackfruit satay. Culi editor Anne put it in front of her adolescents. ‘Just like real string meat,’ was their reaction about the so versatile jackfruit.

A responsible vegan snack with jackfruit

Of course, I prefer to put a healthy dish on the table every day with delicious processed fresh seasonal vegetables, but even I sometimes go for a fatty snack to the cheers of my children, of course. Even the greasy snack with us is always vegetarian and usually even vegan, because you can just as well enjoy fast food without meat (or dairy). This is proven by my fries with vegan jackfruit satay.

Jackfruit satay with vegan threaded meat

Fancy a greasy bite of threaded meat, but responsibly and sustainably? You can do this very easily with jackfruit. A fruit with the texture of threaded meat that takes on the flavour of your dish. I got to work on a patty with vegan jackfruit satay. Marinate the jackfruit in the morning and your tasty vegan jackfruit stew patty will be on the table in no time at the end of the day. For this dish, I used the ‘Young jackfruit in pieces’ from Fairtrade Original.

Jackfruit as a meat substitute in your vegan patty stew

Jackfruit has a good meaty texture. This fruit absorbs all the flavours easily from herbs and spices that are added. You can season jackfruit however you like so that it goes with any dish. Also make this delicious vegan rendang of whether these Bao buns with Jackfruit. Jackfruit is a good source of vitamin A and rich in vitamin C. It also contains vitamin B6 and the minerals potassium and calcium. A jackfruit is originally an Indian fruit and weighs fifteen kilos on average. In the Netherlands, jackfruit is mainly sold canned. Canning makes jackfruit keep for a long time. Young (green) jackfruit absorbs the flavours of herbs and spices best, which is why I used Fairtrade Original's ‘Young jackfruit in pieces’ for this patty of vegan jackfruit satay. Making vegan satay sauce

I never buy ready-made peanut sauce because you can very easily make it yourself vegan and satay sauces from a packet or jar usually have extra sugar or other additives that are not needed. Adding marinated jackfruit to your homemade satay sauce gives you a kind of stew in satay. Eating healthy is very important to me, but you can always wake me up for a fries with vegan mayo or fries with peanut. This sustainable patatje peanut is my ultimate guilty pleasure and it gets that extra something because of the meaty texture of jackfruit. Wow! My adolescents thought so too. You can also eat this vegan jackfruit satay very well alongside your Oriental dish like, fried rice or noodles. My daughter even put the leftover between her sandwich. The ultimate sweeping fast food snack.

Ingredients
  

  • 2 tins of Jackfruit 280 g
  • 100 ml soy sauce
  • 2 fluorescent chicken seasoning
  • 2 toes garlic chopped
  • 1 fluorescent ginger powder
  • 1 red pepper in small pieces
  • pinch of laos
  • 1 fluorescent ground cumin
  • 1 small red onion chopped
  • 1 fluorescent sambal oelek option
  • 200 ml soya milk
  • 300 gr peanut butter
  • 100 ml soy sauce
  • 3 toes garlic chopped
  • 1 el sambal oelek

Instructions
 

  • Drain the cans of jackfruit and drain well. Squeeze the jackfruit well and pull apart solid pieces as much as possible.
  • Put the jackfruit in a bowl and marinate with soy sauce, chicken seasoning, chopped garlic, ginger powder, pieces of red pepper, laos, ground cumin, chopped red onion and sambal, if desired. Place in the fridge for about three hours to allow the herbs and spices to soak in.
  • Make the peanut sauce. Warm up soy milk, peanut butter, soy sauce and chopped garlic in a pan and mix well. Stir occasionally while heating and add the sambal if necessary.
  • Fry the marinated jackfruit for 5 minutes in a little vegetable oil over medium-high heat. Add to the peanut sauce. Delicious with chips, fried rice or noodles.
