Vegan recipe: cauliflower nuggets

How to make the crispiest cauliflower nuggets. This side dish is such a big hit at our house that I make these nuggets almost every week these days. And I'm getting better at it too. In this recipe, I share how to make the crispiest nuggets out of cauliflower. You conjure it up in no time, the oven has to do most of the work. It is a delicious kid-friendly side dish, but it also fits perfectly as a snack on a vegan drinks board.

Child-friendly vegetable: cauliflower nuggets

A Dutch cauliflower can be bought in the Netherlands for much of the year. From June to November anyway, you can buy this vegetable fresh from the fields, which makes a cauliflower a nice sustainable choice. In the cold months, you can sometimes also find a winter cauliflower from Dutch soil, making this vegetable on sale almost all year round. It's also fun to see if you can score a purple or orange cauliflower at an organic market, under the influence of light the colour can change. Moreover, purple cauliflowers often have a softer taste: literally and figuratively a party on your plate.

But how do you cook a cauliflower in a tasty way? Cooked with a cheese mash is not quite our thing and so we look for other easy cauliflower recipes. Earlier, we shared a recipe for whole roasted cauliflower, this dish is also very nice. These cauliflower nuggets are a little more approachable and kid-friendly. My little son also loves this side dish and he is also only too happy to help in the preparations.

Once, when we had no breadcrumbs for our cauliflower nuggets, Frank made his own breadcrumbs from rusk.

How healthy is cauliflower?

A serving of cauliflower contains 77% of the recommended daily allowance of vitamin C. It is also full of vitamin K, protein, thiamin, riboflavin, niacin, magnesium, phosphorus, fibre, vitamins B5 and B6, folic acid, potassium and manganese. It also contains a lot of fibre, which supports good digestion.

How to make the tastiest nuggets of cauliflower: crispy, crunchy and nicely seasoned. A delicious and healthy kid-friendly side dish, but also a welcome guest on a drinks board. And this is the recipe! Thank us later!

Kitchenware

  • cutting board
  • chopperto cut cauliflower into small florets
  • bowls / large trays
  • spoon
  • scale
  • griddle
  • silicone baking mator baking paper

Ingredients
  

  • 1 cauliflower
  • 200 gr flower
  • 200 gr panko (breadcrumbs)
  • 150 ml vegetable milk (oats or soya)
  • 2 fluorescent chicken seasoning
  • 1 fluorescent turmeric
  • 1 fluorescent paprika
  • 1 bags spreading cheese (alternative: Vemondo vegetable grater from Lidl)
  • pinch salt and pepper
  • optional (vegan) mayonnaise and sriracha sauce (Mayo line is tasty vegan mayo)

Instructions
 

Preparation

  • Wash the cauliflower well.
  • Cut the cauliflower into small florets, the smaller the crunchier they get.
  • Put half (!) of the flour and spices in a bowl and stir/mix well. Tip: don't add all the spices right away (see next step).
  • Slowly pour in some vegetable milk until it becomes a porridge (taste with little finger if the porridge tastes good). If necessary, add some extra spices here to taste.
  • In the other bowl, add the flour and panko and stir/mix well.
  • Meanwhile, preheat the oven to 180°C.
  • Dip the cauliflower florets one by one in the bowl with the porridge and then dip each floret well in the bowl with panko after. Place each rose on the baking tray.
  • To taste, put (vegan) cheese over the florets on the baking tray.
  • Put the baking tray with the nuggets in a preheated oven for 30 minutes, flipping halfway through if necessary.
  • Serve the florets with a dip of mayo and sriracha sauce. For children, ketchup may be a better choice due to spiciness,

Notes

If you have leftover nuggets: keep them in the fridge to reheat in the oven the following day, they will become crispy again.

Cauliflower nuggets: cosy meal

These cauliflower nuggets are easy to prepare as a side dish, even the kids love them. It is also a nice dish on a vegan drinks board with friends. You can spice up the sauce to taste. My son eats the nuggets with ketchup. It is completely sustainable if you the stumps of the cauliflower don't throw it away, because you can still make all kinds of things out of it and it is also very healthy. What am I saying ... even healthier.
