A king's meal on the table? With this bright orange, kid-friendly pasta sauce, everyone loves to sit down to dinner. Orange is a tasty colour And the best part? Even little ones have no idea how many vegetables are hidden in this sauce. This healthy orange child-friendly pasta sauce made of different vegetables is very easy to make: the oven does most of the work! Culinary editor Anne wrote down the recipe for us!

Simple & tasty vegan: orange kid-friendly pasta sauce 

How do you prepare a simple homemade orange sauce packed with vitamins? Throw red, yellow and orange vegetables in the oven and mix them into a beautiful orange kid-friendly sauce for over pasta. Every child will love this simple pasta sauce over spaghetti or macaroni. Even difficult (vegetable) eaters will enjoy this sauce. Do you have a blender or hand blender at your disposal? Then this sauce is easy to make. Your oven does most of the work and you clean the kitchen in the meantime. You can relax after dinner. Tadaaa!

Make a fresh healthy pasta sauce for over macaroni or spaghetti in no time with this recipe. Tasty and pretty with arugula!

Ingredients
  

  • 1 small orange pumpkin in pieces
  • 1 onions in pieces
  • 1 red onions in pieces
  • 2-3 coloured peppers (red, orange, yellow) in pieces
  • 2 spring onions dotted
  • 2 sweet potatoes in pieces
  • 5 vine tomatoes diced
  • 1 red pepper (remove seeds if desired) in pieces
  • 3 el olive oil
  • 1 el Italian herbs
  • 1 vegan stock cube
  • 100 ml water
  • balsamic vinegar
  • 1 hand fresh herbs basil, parsley
  • 1 el vegan red or green pesto
  • spaghetti or macaroni boiled
  • 1 cucumber
  • rocket

Instructions
 

  • Preheat the oven to 200°C.
  • Mix the sliced vegetables in a large baking dish or on a baking sheet lined with baking paper.
  • Drizzle with the olive oil and a generous splash of balsamic vinegar, sprinkle with the Italian herbs, crumble the stock cube over it and mix everything with the water.
  • Stew it in 30 - 40 minutes until tender in the preheated oven.
  • Stir every 10 minutes so that all sides cook equally well.
  • Blend the cooked vegetables with 1 tbsp vegan pesto and the fresh herbs in a blender or with a hand blender.
  • Just before serving, season with salt and a dash of ketchup.
  • Eat the sauce over cooked spaghetti or macaroni. Serve with arugula and cucumber.

Easy, healthy and quick to make pasta sauce

You can also make this child-friendly pasta sauce in the morning or a day in advance, so you can get to the table quickly after a busy working day. Delicious with fresh rocket or a salad with avocado. Another tip for cutting the peppers without spilling: press the stem inwards with your thumb, break the pepper open and remove the seeds. That way, you don't throw away anything too much of this vegetable. Do you have some pasta sauce left over after your dinner? Don't throw it away! Add a little water and possibly a stock cube and some salt & pepper and turn it into a delicious orange soup. Delicious with French bread. This way, you can eat your orange child-friendly pasta sauce for two days!
