Recipe: homemade vegan cheeseburgers made from beans

Turning your own vegan cheeseburgers: it's not only tastier, but also much healthier. Greenlist chef Anne shares her favourite recipe for vegan burgers. She makes these from Cannellini beans and spinach. So packed with vitamins. And with vegetable cheese grater, you can turn them into vegan cheeseburgers in no time.

Homemade vegan cheeseburgers from Cannellini beans

Meat substitutes have been in the news a lot lately. They are said to be too salty and contain too much saturated fat. Everything in moderation also applies to vegan burgers, but did you know that you can make your own veggie burgers? It's not difficult at all and it's so healthy. I make my burgers from beans and also put vegetables in them. And what's also very handy: you can do the preparation beforehand, which makes it easy to put the burgers on the table on a busy weekday evening.

You can very easily make vegan burgers and thus cheeseburgers from beans. For these vegan cheeseburgers, I use Cannellini beans, these are white beans bursting with fibre and vitamins. Fibre is necessary for healthy intestines. They contain phosphorus, calcium, zinc and iron. These beans have a cholesterol-lowering effect. So a healthy legume to eat. The Cannellini bean is related to the kidney bean, which the shape suggests. You can find Cannellini beans in most supermarkets among the canned vegetables and it is not an expensive choice at all.

Leafy vegetables for extra protein

Because I make vegan burgers from beans and leafy green vegetables, it automatically contains a lot of protein and you also get more vegetables straight away. Ideal also for children who are not so keen on vegetables, with this vegan burger those greens and fibres are sure to go in. I like to garnish my burger sandwich with other healthy delights, such as avocado, lamb's lettuce rocket, small tomatoes and sprouts. Vegan mayonnaise and ketchup are also a delicious (slightly less healthy) addition. By the way, an avocado is unfortunately also quite harmful to the planet. And yet, even here you can make more sustainable choices and still enjoy your avocado. Buy it organic and from Europe is the tip!

Homemade vegan cheeseburgers made from beans

Have you ever made your own vegan burgers? You can do this very well from legumes and vegetables. That way, you have a healthier plant-based burger on your plate than the processed ones from the supermarket. This vegan cheeseburger is made from Cannellini beans. Not available in your supermarket? Substitute them for other white beans.

Kitchenware

  • large frying pan
  • good pan with (environmentally friendly) non-stick coating

Ingredients
  

  • 2 el curry powder
  • 1 el ground cumin seed
  • 1 red onion in small pieces
  • 2 toes garlic in small pieces
  • 2 el tomato paste
  • 400 gr Cannellini beans can, drained and rinsed
  • 200 gr fresh spinach washed and sliced
  • 6 sweet and sour gherkins in small pieces
  • black pepper and salt
  • 2 el Garam Masala
  • 100 gr vegan cheese grater
  • 100 gr cashew nuts
  • 5 Medjool dates
  • 100 gr oatmeal
  • 100 gr maize flour
  • tortilla chips
  • vegan (cheddar) cheese slices
  • ketchup
  • vegan mayo
  • vegan burger buns
  • lamb's lettuce

Instructions
 

  • Warm the curry and ground cumin seeds in the frying pan until fragrant. In this, fry the sliced red onion in a little olive oil or a splash of water until it colours.
  • Add the tomato puree and fry briefly. Add the sliced garlic and fry briefly. Add the chopped spinach, Cannellini beans and gherkin pieces and stir until the spinach shrinks.
  • Remove the pan from the heat and add the vegan cheese grater and Garam Masala. Leave the mixture to cool.
  • Meanwhile, blend the cashews, dates and oats in a food processor and add to the slightly crushed (with a masher) cooled bean mixture.
  • Add the cornmeal and, with slightly damp hands, knead six equally thick burgers from the mixture. Pass the burgers through oatmeal or mashed tortilla chips.
  • Fry the burgers in a good pan (with eco-friendly non-stick coating). Fry well browned on both sides and at the end place a square vegan cheese slice on the burger. Flip this again very briefly and quickly turn back again for a good melted vegan cheese.
  • I topped this sandwich with corn salad, homemade vegan cheeseburger and ketchup + vegan mayonnaise. The vegan mayonnaise ‘Remia Mayolijn’ is a tip.
