Recipe: the easiest vegan pancakes

Baking pancakes seems impossible when you don't want to use eggs, but with this recipe we show that this preconception is not true. With this recipe, you will bake a whole stack of vegan pancakes and make everyone happy.

Never eat pancakes again as a vegan? Well no, make vegan pancakes!

‘Now I can never eat pancakes again.’ This thought shot through my mind when I decided to cook and bake plant-based from now on. Fortunately, I soon discovered that there are quite a few egg substitutes out there. For instance, you can use soft tofu or silken tofu as a substitute in pastries. Ripe banana is a good egg substitute in sweet and moist pastries like cake. If you don't like the taste of banana so much, you can also use apple puree Or use soy yoghurt. One tablespoon linseed mixed with two to three tablespoons of water (leave for a while) replaces one egg, but also one tablespoon of chia seed mixed with three tablespoons of water (let stand a little longer) represents the binding power of one egg. And let that chia seed be a perfect egg substitute for pancakes.... You hear it, there are plenty of vegan egg options which, by the way, we've listed for you before (check this out here).

The easiest vegan pancakes are made like this

Making a pancake batter is quickest by using a pancake mix from the supermarket. Substitute the milk and eggs you need to add yourself for a vegetable-based variety and you're done! For a good batter with the chia seed egg, I always use a multigrain pancake mix. A pan with a safe non-stick coating and vegetable butter is needed so your easy vegan pancake won't stick. To keep pancakes warm while baking, I use a large pan lid. That way your stack of vegan pancakes is still nice and warm after baking. Wondering what we mean by a ‘safe’ non-stick coating? Getting started with vegan pancakes that can be topped with either sweet or savoury.

Ideas for savoury vegan pancake

I used to eat cheese pancakes or bacon pancakes with syrup. I don't do that anymore, but oi oi oi how I love savoury pancakes. And so I started looking for new recipes. Now I top my savoury pancake with vegan pesto, iceberg lettuce, halved cherry tomatoes, vegan spreading cheese and sambal Oelek. Sounds crazy? Try it! Zálig! Still want to bake cheese or bacon pancakes? Bacon and cheese also come in many plant-based varieties these days. I sometimes throw vegetable cheese grater through the last bit of batter to bake some more vegan cheese pancakes. Delicious!
