These vegan bao buns with jackfruit are immensely easy and incredibly tasty. There are endless combinations to think of with bao buns, but this time culinary editor Nina makes one of our favourites: bao buns with delicious Asian marinated jackfruit.

Asian recipe & vegan: bao buns with jackfruit

Originally grown mostly in India, jackfruit - as the world's largest fruit - can sometimes weigh up to 40 kilograms! Jackfruit has a meaty texture and is therefore often used as a meat substitute in many vegetarian or vegan recipes. For my bao buns with jackfruit, I use a young and immature variety that can absorb Asian flavours and spices well. I am extremely happy that more and more people have discovered the versatile possibilities of jackfruit and it is therefore much more readily available in the Netherlands. For this dish, I used the Fairtrade Original Young jackfruit which - to make it even easier - is even available in the pulled variety. Want to know more about jackfruit? Then check out this article.

You see these bao buns on the menu in many trendy restaurants. With this recipe, you can make them at home and completely vegan with jackfruit as filling.

The ideal recipe for a shared dining table

The great thing about this vegan recipe is that jackfruit bao buns look fantastic on the table. Having friends or family over? Serve a beautifully set table where you put all the bao buns, the jackfruit and all the other toppings on the table separately, so everyone can top their own bao bun themselves. Easy, festive, colourful and, more importantly, a fantastic dish that will really impress your guests. Even among real meat lovers. If you have any other ideas for tasty alternative toppings to go alongside the jackfruit, feel free to add more to your shared dining table.

Vegan bao buns - from the toko or homemade

Would you prefer to whip up this recipe in no time? Then I recommend stocking up on ready-made vegan bao buns at the toko. These are available in different sizes in the freezer compartment and are often packed per ten. Do you have more time and want to impress your guests even more? Then, of course, you can also make the bao buns yourself. You can find plenty of vegan variations that do not contain milk or milk powder.

Vegan recipe: bao buns with jackfruit

This is one of my favourite sandwiches: bao buns with jackfruit. You can vary endlessly with bao buns and it looks so cosy on the table when you have guests.

Kitchenware

  • frying pan
  • saucepan
  • steamer basket
  • baking sheet
  • kitchen roll

Ingredients
  

  • 1 tin Fairtrade Original pulled young jackfruit
  • 1 toe grated garlic
  • 1 el agave syrup
  • 75 ml soy sauce manis
  • 3 el soy sauce
  • 1,5 el hot sauce/ sriracha sauce
  • 2 fluorescent Japanese mirin
  • 1 fluorescent cornstarch + 2 tsp water
  • 2 fluorescent water
  • 6 bao buns
  • 2 snack cucumbers
  • 2 stalks of spring onion
  • 1 red or yellow pepper
  • 1 dash of rice vinegar
  • red cabbage raw & chopped
  • 1 handful of fresh coriander
  • 1 handful of roasted peanuts
  • hoisin sauce

Instructions
 

Bao buns

  • Bring water to the boil in a saucepan (where the steamer basket fits exactly).
  • Cut the baking paper into the shape the steamer basket and spread it on the bottom.
  • Spread the bao buns in the steamer basket and steam according to the packet.

Jackfruit

  • Grab a frying pan.
  • Add the soy sauce, garlic, soy sauce, agave syrup, sriracha & Japanese mirin and heat on low heat.
  • In a small bowl, mix the cornstarch with the water and then add to the marinade in the frying pan so that the marinade binds well.
  • Drain the pulled jackfruit and pat dry with kitchen roll.
  • Add the jackfruit to the marinade and simmer for 15 minutes with the lid on the pan.
  • If the marinade has not thickened sufficiently, remove the lid to let it cook in further.

Toppings

  • Meanwhile, cut the cucumber into small slices and add to a bowl with a splash of rice vinegar for a fresh acidity.
  • Cut the spring onion and red pepper into small rings and finely chop the peanuts.
  • Serve the spring onion, red pepper, chopped peanuts, red cabbage, coriander and cucumber in their own bowl each.

Finish

  • Scatter the bao buns, jackfruit and all other toppings on the table.
  • Build your own bao bun and garnish extra with fresh coriander and hoisin sauce.

Notes

Tip: If you bought the bao buns from the toko, before steaming them, let them defrost for a while. This way, you can easily take them apart and steam them separately in the steamer basket.
