Vegan recipe: oyster mushrooms in beer batter with an Asian twist

You can buy oyster mushrooms in supermarkets almost all year round. The large mushroom with its meaty texture does well in the Netherlands. You can even grow it very easily at home on coffee grounds. Should you get the oyster mushroom at home, oyster mushrooms in beer batter are a delicious dish. If you make enough batter and add (leftover) vegetables, it makes well-filled vegetable pancakes. In short, a full-fledged sustainable meal and not expensive at all! It is one greenlist-favourite and also very popular with children.

The oyster mushroom, who doesn't know it? Together with the mushroom, this flat oyster-shaped mushroom is the best-known mushroom in the Netherlands. The oyster mushroom is trendy because more and more people are discovering it as the perfect healthy meat substitute. But there is more! Did you know that you can also grow mushrooms yourself on coffee grounds that most people and companies end up in the bin? We do this with our grow kits from Fryslân Fungies.

Fryslân Fungies?

Fryslân Fungies‘ grow kits are nothing more than a recycled bucket with the right fungi (spawn) that anyone can use to grow their own oyster mushrooms at home. All you need besides that is coffee grounds, a little water, patience and a lot of love. We have been ’kitchen sink farmers' for over a year now and, with three grow kits, we can regularly count on a new harvest (some pots have even given mushrooms three times). Earlier, I wrote a review on it. It really is a super fun gift too to give, the first growkit was a Saint Nicholas gift for my husband David. He found it very original and fun to get and do. Whether you grow the mushrooms yourself or buy them in the supermarket, it is still a delicious mushroom and a sustainable price-conscious choice. A really fun and easy dish are oyster mushrooms in beer batter that you can also put all your leftover vegetables in. So this is basically just a vegetable pancake, a perfect evening meal. How to make it?

Oelala... Oyster mushrooms in beer batter. You can put all your leftover vegetables in this tasty vegan dish, turning them into nutritious vegetable pancakes in no time. This is a budget recipe to lick your fingers at. Who says good, healthy food is expensive?

Kitchenware

  • 1 frying pan with lid and spatula
  • 1 mixing bowl
  • 1 hand blender
  • 1 scale
  • 1 ladle or other large serving spoon

Ingredients
  

Fried oyster mushrooms

  • 150 gr oyster mushrooms
  • 2 fluorescent soy sauce
  • 2 el water
  • ¼ fluorescent salt
  • ½ fluorescent sugar
  • oil for frying

Beer batter

  • 150 gr flower
  • 15 gr cornstarch
  • 2 cloves garlic crushed
  • 1 fluorescent cane sugar (or other fair trade raw sugar)
  • ½ fluorescent salt
  • 1 fluorescent baking powder
  • optional: dash of turmeric powder or paprika
  • 1 glass beer
  • 1 el soy sauce  
  • 1 fluorescent sesame oil (optional)

Making vegetable pancake

  • fried oyster mushrooms (see step 1)
  • basis for beer batter (see step 2) 
  • 3 groves spring onion (chopped)  
  • 1 onion (chopped)  
  • 1 red pepper (chopped)  
  • Optional leftover vegetables such as peppers, leeks, carrots, etc.
  • oil for frying
  • Optional sriracha sauce or soy sauce for dipping

Instructions
 

Step 1: frying oyster mushrooms

  • Tear the oyster mushrooms into thin strips.
  • Mix water, soy sauce, sugar and salt in a bowl to make a marinade (sauce).
  • Heat a frying pan and put the oyster mushrooms in it without oil!
  • Then add the sauce, cover until all the liquid has evaporated (this took five minutes in our case).
  • Only then add oil and fry the oyster mushrooms for a few more minutes.
  • Ready? Set the oyster mushrooms aside.

Step 2: make oyster mushrooms in beer batter a.k.a. vegetable pancakes

  • Put the flour, cornstarch, crushed garlic, cane sugar, sea salt, baking powder and pinch of spices in a bowl.
  • Ready? Set aside next to the oyster mushrooms.
  • Chop all the vegetables as finely as possible for in the pancake: spring onion, red pepper and optionally any other leftover vegetables you want to put in. We had saved a pepper for fifty cents and added it.
  • Put everything back into a bowl and set aside.
  • Put the beer in the bowl (with the flour and flours) and make a batter with the help of the mixer.
  • Add the chopped vegetables and oyster mushrooms and stir well.
  • Put a frying pan with a dash of oil on high heat. Make sure the pan is well hot, just as you would fry an ordinary pancake.
  • Using the large spoon, pour batter into the pan and fry pancakes. Fry them nice and brown on both sides. Be careful, this goes really fast!
  • Serve with the soy sauce or sriracha sauce.
