Here she shares with us the recipe for a vegan smoothie bowl with a tropical twist!
Vegan smoothie bowl for breakfast
A smoothie bowl sounds very fancy, but is basically nothing more than a smoothie in a bowl with delicious toppings. For toppings, you can think of (dried) fruit, seeds, berries, granola and nuts. Secretly, those toppings are quite important because they make you have to chew. In fact, chewing is important in nutrient absorption. Chewing ensures that enzymes are already produced in your stomach to absorb the nutrients. If you don't chew, fewer enzymes will also be present.
Tropical smoothie bowl
So many different fruits, so many different combos and flavours. Once you have tried a smoothie bowl, it immediately tastes like more. You can experiment endlessly with different fruits. I made this vegan smoothie bowl with my favourite melon, the Galia melon. I combined the melon with pineapple, mango and banana. A delicious creamy tropical smoothie bowl.
Did you know that you can also add fresh green leafy vegetables to a smoothie just fine? Spinach, basil or (in this case) parsley are hearty and healthy in a smoothie. In fact, green leafy vegetables are very important for your body. They are full of vitamins, minerals, antioxidants and fibre.

Parsley in your smoothie bowl?!
Parsley is a good source of vitamins, iron and folic acid. It helps keep your body healthy. Parsley can play a role in preventing cardiovascular diseases. So add parsley to your meals as often as possible, or make one of those delicious fresh vegan smoothie bowls with it.

Recipe vegan smoothie bowl
Kitchenware
- blender
Ingredients
- ½ pineapple
- ½ galia melon
- 1 mango
- 2 bananas
- 1 el coconut rind
- hand parsley
Garnish
- blueberries
- coconut rind
- granola
- chia seed
- banana slices
- vegetable yoghurt
Instructions
- Cut the fruit into pieces.
- Blend with the coconut rind and parsley in a blender to make a smoothie.
- Pour into your favourite bowl and divide the garnish on top.
Vegan smoothie bowl with seasonal fruit?
Although I chose to make a tropical version for this smoothie bowl, it is of course also super delicious to choose seasonal fruit as a base or topping. For example, keep our list of seasonal fruits so you know exactly which fruit is in season and therefore readily available and nice and cheap.
